Simple Breakfast Ideas – Dragon Fruit Parfait

Finding simple breakfast ideas that are healthy can be a challenge. In the morning, I’m rushed for time. I’m trying to make sure that everyone gets off to work or school while starting up things for my work day. My normal go to breakfast on a busy day is yogurt and fruit. Sometimes I make it a little different and turn it into a parfait like this Dragon Fruit Parfait I made in honor of the all-new Netflix original series Dragons: Race to the Edge. I am a member of the Netflix Stream Team.

Simple Breakfast Ideas – Dragon Fruit Parfait

If you’ve never tried Dragon Fruit before, you don’t know what you’re missing. Dragon Fruit is also called a pitaya and is actually an exotic cactus fruit. Your dragon fruit may have a white center or a bright pink center depending on the version that your store carries. My stores only carry the one with the white center. Not only does this work if you’re searching for simple breakfast ideas, it’s the perfect healthy dessert!

Dragon Fruit Parfait

Ingredients

  • 1 Dragon Fruit or pataya, peeled & cut into chunks
  • Greek yogurt, plain or vanilla depending on your preference
  • 1 cup of other miscellaneous fruit (berries, peaches, papaya, etc.), cut up
  • 1 cup of granola

Instructions

  1. Make layers of the fruit, yogurt and granola until your bowl or glass is full.
  2. Enjoy!
